- 1 Can San Marzano tomatoes
- 1 Small Carrot sliced
- 1 medium white onion, cubed
- 2-3 tsp olive oil
- 2-3 cloves garlic
- ½ tsp black pepper powder
- ¾ tsp sugar
- 1 tsp salt or to taste
- 4 cups vegetable Broth
- ¾ cup heavy cream or as needed
- 1 tsp fresh basil leaves
- ½ tsp oregano
In a pot, heat the olive oil and add sliced garlic
Saute for a couple of mins, make it doesn't burn.
Add cubed onions and saute until soft.
Add sliced carrot to it and let it saute until slightly soft.
Add the can of marzano tomatoes, along with the broth and sugar. Let it simmer for about 10-12 mins until it is slightly thickened.
Add oregano, salt, and pepper. Let it simmer for a couple of mins.
Blend it with immersion blender completely.
Add fresh basil and serve it hot with grilled cheese or your choice of bread.
