Veggie Quesadillas-Diabetes Friendly Thursdays

This week’s theme for Diabetes Friendly Thursday is flatbread.  Was trying to see what can be made other than Indian flatbreads which could be a little fattening sometimes.  While brain storming with Shailja, I decided on Veggie Quesadillas.   These are super easy and flavorful.

In this recipe I have used store bought spinach and whole wheat tortillas, as I have read that spinach which contains 40% of your daily value of magnesium, which can help regulate your blood sugar levels.  According to the experts, one should substitute spinach for lettuce to get more of this magnesium rich leafy veggie to your diet.

Another ingredient I have used is zucchini which has the presence of vitamin B complex and makes it a good choice for diabetes. Abundance of fiber and pectin plays an important role in regulating your blood sugar levels. Zucchini consumed in raw form has more benefits as compared to cooked.

Now to these quick and easy Veggie Quesadillas for your weeknight dinners when you are short of time and in need for something in a rush.

Ingredients:

  • 1 zucchini, peeled and sliced
  • 1 small green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 red or yellow onion, cut lengthwise
  • 1 tsp roasted cumin powder
  • salt to taste
  • olive oil
  • Spinach & Whole Wheat Tortillas (store bought)
  • 1 packet of Mexican cheese blend (shredded)
  • hot sauce of your choice

Directions:

Slice all the veggies and wash them.  Let them drain properly. Then in a mixing bowl, add the veggies along with a little bit of olive oil, salt and cumin powder.  Mix using your hands.  Heat the convention oven at 400F and place all the veggies single layered on the baking sheet on top of the aluminum foil. Spread the veggies evenly.  Place the tray in the preheated oven for 15-20 minutes until the veggies are nice and soft.

Heat the cast iron flat plan and using a cooking spray or olive oil coat the pan.  Place one of the tortillas on it.  Then sprinkle a little bit cheese and then the roasted veggies on top.  If you are using some kind of hot sauce, put it on top of the veggies and then sprinkle more cheese and top it with another tortilla.

DSC_3561 Let it cook for a couple of minutes and carefully turn the quesadilla on the other side.  Press it with the spatula so that both the tortillas stick together with the help of the cheese.

Take it off the heat after you get the desired crispiness and cut it into 4 or 8 pieces using the  pizza cutter.  Serve it with your favorite salsa and sour cream.
