Spiced Bhein (Lotus Root)

How many of you have heard or tried Lotus Root before?  Most parts of the world probably hasn’t as it is most commonly used in Asian cooking.  My dish is called Spiced Bhein (Lotus Root) as I have used indian spices to make this dish more flavorful.

We know about the flower which represents  purity and divine beauty, but the root which is under water has a lot of health benefits.

The benefits include boosting the immune system, lower blood pressure, prevents from various forms of cancer, headaches, stress, balances the mood and helps relieving depression.  It has mix of vitamins, minerals, phytonutrients and a significant source of dietary fiber.

Now you know the health benefits, lets see how it can be prepared.  This is the first time I have prepared this dish, but it is my mom’s recipe.  Mom used to make lotus root quite often when we were back in India.  Haven’t had this often here as it is not easily available.  I went to the Asian grocery store the other day and saw them there.  Picked up a couple of roots as I wasn’t sure if anyone in my family will like it.  To my surprise my daughter liked it.   Lets get to this easy recipe without any further delay.

Ingredients:

  • Fresh lotus root, sliced
  • 3/4 tsp roasted cumin powder
  • salt to taste
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 3/4 tsp amchoor
  • 3/4 tsp homemade garam masala
  • 2 tbsp olive oil
  • 2 tsp roasted besan
  • 1 cup water
  • juice of half lemon
  • cilantro to garnish

Directions:

Peel and slice the lotus root, not too thin or thick.  In a pressure cooker, add the water and lotus root.  Cook it until two whistles.  Let it sit in the steam.  Drain it and set aside.

In a frying pan, add the oil and let it heat up.  Put the boiled roots in the pan along with all the spiced except besan.  Mix it well.  Let it roast for a few mins.  Adjust the spice one they are roasted as per your taste.

Now add the besan which will give it a little crispiness.  Roast for additional few minutes.  Drizzle lemon juice and garnish with cilantro before serving.
