Red Velvet Cake Pops

Happy Valentine’s Day!!!!  This cake can be bright red, or deep red which is very moist in texture because of buttermilk as one of the ingredients.  Perfect for Valentine’s Day as red is the “color of love” with cream cheese frosting.  Started with making a heart red velvet cake but then at the end changed my mind and made some Cake Pops which are one of the most popular item out in the bakeries these days.

Ingredients for the Cake:

  • 2.5 cups of All Purpose Flour
  • 1.5 cup Sugar
  • 1.5 Oil
  • 1/2 tsp salt
  • 1-2 tsp unsweetened cocoa powder
  • 2 tsp vinegar
  • 2 eggs (room temp)
  • 1 cup buttermilk
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 2 tbsps Red food coloring

Ingredients for the Pops:

  • Crumble Red Velvet Cake
  • 4-5 ounces of cream cheese
  • 2 tbsps powdered sugar
  • Lollipop Sticks
  • White Candy Melt or white baking chocolate

Directions:

In a mixing bowl, add the eggs, sugar, oil and whisk it to mix well.  Now add vanilla essence and buttermilk and whisk again.  Now add all the dry ingredients n mix well. Add vinegar and the food color and give it a good mix.   Pre heat the oven at 350F.  In the meantime, take your baking pan and grease it lightly.  Sprinkle the flour over it and shake the excess out.  Pour the batter and bake it at 350F for 40-45 mins or until the toothpick comes out clean.  Let it cool down for a few minutes before placing it on the cooling rack.

For the Pops:

Crumble the cake well. Add enough cream cheese so that you can bind the cake and make the balls. It should be moist enough to avoid cracking. Add a couple of teaspoons of powdered sugar to the mix.  First make the balls and place in the freezer for 15 mins.

In the meantime, put the candy melts in the microwave bowl and heat it for 1 min and stir then heat again in 30 sec intervals and stir to see if they have melted completely. If the consistency is thick add 1/2 tsp of vegetable oil. Now dip the lollipop stick into the melt and put it in the cake balls.

This is to make a seal.  Place them again in the fridge for another 15-20 mins. Take them out and dip one by one in the candy melt to cover the cake. Make sure there is no excess melt others it won’t be smooth looking.  Hold the pop in your hand and kind of tap the wrist n twirl the pop so excess drips off.

Then decorate the way you like by adding sprinkles of your choice when it wet or do an icing.  I used the candy melt itself and add in some red food coloring and put it in a handmade cone.  A very good idea to make them for kids birthday.
