So are you all ready for spring? I am for sure…done with winters.. Weather has been so up and down that can’t tell what’s going on? Last couple of weeks weather was a little warmer kind of spring but then on Friday we had rain and snow all day. I thought may be making spring/summer types of dishes will make me feel like spring is here. Bringing you an easy recipe of Pineapple Salsa which can be served with tortilla chips.
I made Pineapple Salsa as an extra appetizer item for my “kitty” last saturday as I had pineapple at home along with a few items from your pantry. You must be thinking what is kitty? Kitty is like a monthly get together usually ladies but we did a family one so husbands and kids are part of it. We set a dollar amount for every couple and meet up at one couple’s house. Who so ever’s house we meet gets that amount from everyone. Just a way to save something on a side. Its also an excuse to meet otherwise everyone’s schedule is so tight that its hard to meet.
So would you like to try this salsa for your next get together. A few ingredients and a great addition to your appetizer table.
Ingredients:
- 1-2 pineapple cubed ( small)
- 1 jalpeno chopped
- 1 small onion, chopped
- 2-3 sweet colorful peppers, chopped (i used red n orange)
- 1 tsp roasted cumin powder
- 1/4 tsp red chili powder
- salt to taste
- juice of 2 lime/lemon
- chopped cilantro
Directions:
Cut the pineapple into small cubes. Also chop all the other ingredients.
In a mixing bowl, add all the ingredients along with salt and spices. Mix it well and do a taste test to see if you need any more lime juice or salt. Once everything is good, refrigerate for a couple of hours.
Serve chilled with tortilla chips.

Sarika, I love the sweet and tangy taste of pineapple salsa. It sure makes a wonderful starter to enjoy with some tortilla chips or even as a salad. Love it.
