Parsai Ke Chaawal ki Kheer (Rice Pudding)

Rice kheer (pudding) is a traditional sweet which is prepared on auspicious occasions such as Navratri or Diwali.  It is made by boiling rice with milk and sugar, flavored with cardamom.  Today I prepared this Kheer on an auspicious day of Shivratri with Samo Seeds which is a special type of rice that is used during fasts.

Ingredients: 

  • 5 Cups whole milk
  • 1/4 cup Samo seeds (vrat ke chaawal )
  • 1/2 cup sugar
  • 10-12 almonds slivered
  • 5-6 green cardamom seeds crushed

Directions:

In a heavy pot, put the milk to boil.  Wash the rice and mix it with the milk.  Let it come to a boil then simmer the heat.  Cook for 25 minutes stirring occasionally until rice is fully cooked.  Like the regular rice this kheer doesn’t take long to cook.

Add sugar and cardamom and mix well.  Make sure you don’t scrape the bottom of the pan very hard otherwise you will get the part which is stuck to the pot and will be visible in your kheer.

Let it cook for another few minutes and garnish it with almonds.  You can serve this hot or cold depending on what your preference is.
