Mexican Wedding Cookies

Hello everyone!!!  I know what you all are thinking, first you didn’t hear from me for the past one and a half month…hahaha.  I had to do it, its holiday time…  I was up till 1am last night baking and then writing my previous post.  Mexican Wedding Cookies, a soft, nutty and buttery cookie which is made out of just 5 ingredients and the best part is that it is egg less.  How awesome is that?

Mexican Wedding cookies are irresistible, it is so hard to not like these cookies as my kitchen had this lovely aroma of nuttiness and enjoyed this crumbly cookie to the fullest.  May be I should put more time into baking.  I am loving it.  Have you baked this holiday season? What are you waiting for?  You still have time, these cookies can be done in 30-35 minutes max.  Try this easy recipe out and see for yourself,  I promise you won’t be disappointed.

Ingredients:

  • 12 oz all purpose flour
  • 5 oz powdered sugar
  • 8 oz unsalted butter, room temperature
  • 5 oz walnuts or pecans, slightly toasted & chopped
  • 1 tsp vanilla essence
  • 1/2 cup powdered sugar, for rolling
  • 1/4 snow sugar for dusting (will find it in confectionery store)

Directions:

Cream butter and sugar until fluffy.  The more you whip the softer the cookies will be.

Then add vanilla essence along with toasted walnuts or pecans  to it.  Now add the flour and mix it using your hands.  The dough will be super soft and sticky.  After you mixed everything properly, refrigerate it for a few minutes so that you can handle the dough easily. 

Make balls by taking a little dough at a time and roll them in the powdered sugar.  Place it on the baking sheet.   Preheat the oven at 350F and bake it for 12 mins.

Pull it out and let it cook down on the baking sheet for a couple of minutes and then transfer it to the cooling rack. 

Once it cools down, dust the cookies with snow sugar using the strainer.  If you don’t have snow sugar then dust it with powdered sugar.

Enjoy it with a cup of tea or coffee.  Store it in the air tight container.

    Ohh these cookies look so delicious. They are on list of ‘to do’. The snow sugar on top makes it look so festive.
