Fenugreek is a plant which has oblong leaves which can be used in your daily diet and has a lot of health benefits such as treating elevated blood sugar levels. This dish that I have for you is methi aaloo which is fenugreek greens with potatoes. I have used very minimum spices as it has a very unique flavor of its own.
Ingredients:
- 3-4 bunches of methi (Fenugreek)
- 2-3 potatoes cubed
- 1/2 tsp cumin seeds
- ginger chopped
- 1/2 tsp turmeric
- salt to taste
- 1/2 tsp red chilli powder
- 1 tomato cubed
- 2-3 tbsps olive oil
Directions:
Clean and wash the methi leaves thoroughly.
Roughly chop those leaves and set aside. In a kadhai, heat the oil, and add jeera to it. Let it splatter. Now add the cubed potatoes and cover it for a few minutes.
Do not let the potatoes cook all the way, otherwise they will be overcooked.
Add the washed and chopped methi to the potatoes. Also add turmeric, red chilli powder, salt along with chopped ginger. Mix it well and cover again.
After a few minutes, uncover the kadhai and add the cubed tomatoes and let it cook uncovered.
Roast for a good few minutes until the water is evaporated.
Serve hot with chapati or roti as a side dish.
