How was everyone’s Valentines? Hope you all enjoyed your day with your loved one. After all the chocolates and eating out, I am sure you are looking to have a light meal. I am not sure about you all, but we enjoyed our Instant Pot Vegetable Pulao which was ready in less than 20 minutes.
Instant pot has made my life so much easier. There is so much you can do with this one pot. This one pot meal came out amazingly delicious which was enjoyed by everyone in my family. Specially when its a week night and you are looking to make dinner in a jiffy, instant pot can come and rescue you.
Vegetable pulao is a very basic recipe and made with slightly different spices in different parts of India. Hope you all enjoy what I have prepared for you today. I have included my Instant Pot video with step by step instructions on how to make the pulao.

Ingredients:
- 1 cup basmati rice (washed & soaked for 10 mins)
- 1 potato, cut lengthwise
- 1 red onion, sliced lengthwise
- 1/4 cup soy chunks, soaked in hot water
- 1/2 cup mix veg (frozen)
- 1 inch cinnamon stick
- 2 tomatoes, pureed
- 1/2 tsp cumin seeds
- 1/4 tsp red chili powder
- 1/4 tsp garam masala
- salt to taste
- 1.5 cup water ( i did it approx)
- 2 tsp olive oil
Directions:
Wash and soak the rice. While that is getting soaked, slice the onions and potatoes. Also soak the soy chunks in to the hot water so they get softened. Put the instant pot on saute mode and let it heat up. Add oil and then the cinnamon stick and cumin seeds. Let it splutter, add onions and saute for a couple of minutes and add sliced potatoes along with the soy chunks, mix veggies. Saute for another couple of minutes.
Add tomato puree, along with all the spices including salt, red chili powder, garam masala. Mix it well. Now add the soaked rice and water. Check the salt and other spices at this time. Add if needed. Mix it well and shut the saute mode off.
Close the lid and seal the pressure cooker. Press the rice mode and let it cook. This will take about 12 minutes. Once the timer is done, quick release the steam so that it doesn’t over cook.
Once the steam is released, open the lid and your pulao is ready to be served. Below is the FB live link for the pulao.
