A very simple dish which is made differently in several parts of India. This one is typical Punjabi style Gobhi Aloo which is dry and is served with chapati (roti) or paratha. It is just cauliflower and potato stir fried in an aromatic blend of Indian spices.
Ingredients:
- Cauliflower Florets
- 1 Onion chopped
- 2 Potatoes Cubed
- 3 tbsp olive oil/canola oil
- Ginger finely chopped
- Green Chilli chopped
- Asafoetida
- Mustard Seeds
- Cumin Seeds
- Salt to taste
- Red chilli powder
- Garam Masala (All spice)
- Turmeric Powder
Directions:
In a kadhai, heat the oil. Add mustard and cumin seeds along with asafetida. Let it splutter then add chopped onions until they turn pink. Then add the cubed potatoes and cover it for a few mins so the potatoes are half cooked.
After this add the cauliflower florets and all the spices which is salt, red chili powder, turmeric powder, garam masala. Finally add the ginger and green chilli and mix well. Cover the kadhai and let it cook.
It is good not to stir the gobi a lot as it starts breaking. In between give it a stir and then cover it again. Check to see if the potatoes are done, then let it cook uncovered for another few mins. Add chopped cilantro and mix.
Garnish with a little more cilantro. Serve hot with chapaati.
