What is Garam Masala? It is a blend of ground spices which is extensively used in Indian cooking. Garam Masala translated in english means “Hot Spice” and around the world it is known by the name of “Curry.” There are so many versions of garam masalas so the ingredients vary from one recipe to another. This recipe is a typical Punjabi style spice mix which I learned from my mom.
I like to make my own garam masala as the store bought masala looses its aroma very quickly. I make it in small portions so this way it doesn’t loose the aroma and have fresh every 2-3 weeks. So give this recipe a try and I know you will surely love it as it is so aromatic and gives the dish so much flavor.
2 cups Coriander seeds
1/2 cup Jeera seeds
6-7 Bay leaves
5-6 Cinnamon sticks
5-6 Black cardamom
1/2 cup Cloves
Directions:
Mix all the ingredients in a bowl. Dry roast them in a pan until you smell the nice aroma. Let it cool.
Grind it in a coffee grinder, depending on how you like it coarse or fine. I like it a little coarse. Store in a air tight bottle.

P.S.- If you make the masala in small amounts its better, so this way you have fresh garam masala all the time in your spice box.
