One of the yummiest North Indian dish Drumsticks Aloo Masala. This is drumstick vegetable not the chicken drumsticks. These drumsticks are pods of the plant called Moringa oleifera. It is native to the southern foothills of Himalayas.
Very popular in India, but since I moved to US, if I remember correctly this is the second or third time I found them fresh. Last weekend I went to the Indian market and I was like let me grab a few things while I am here. While shopping I came across these beauties and couldn’t resist. Bought only a few thinking that I am only one who is going to enjoy. I made this for the first time and it came out so yummy even my 7 year daughter tried it and goes, “Mummy this is yummy.” I usually use drumsticks as one of the sambhar vegetable.
Ingredients:
- 4 drumsticks, cleaned and cut
- 1 big potato, cubed
- 1 medium sized red onion, chopped
- 4-5 garlic cloved, chopped
- 1 tomato, chopped
- salt to taste
- 1/2 tsp turmeric
- 1/2 tsp red chili powder or to taste
- 1/2 tsp garam masala (used homemade)
- 1/2 tsp amchoor
- 2 tbsp olive oil
- 1/4 cup water
Directions:
Clean the drumsticks by carefully peeling the hard skin. Cut them about 2 inches long.
In a kadhai or cast iron pan, heat the oil and add chopped onions. Saute until brown.
Add chopped garlic and stir for another couple of minutes. Then add chopped tomatoes and cook for a few more minutes until the tomato is cooked.
While the tomatoes are cooking, peel and cut the potatoes. Add it to the onion and tomato masala along with salt, turmeric and garam masala.
Mix well, and cook the potatoes covered for a few minutes. This way they will be somewhat cooked. Add the washed drumsticks and give it a stir.
Add water and cook it covered until the potatoes are cooked. Also add amchoor and mix well.
Enjoy with dal and rice or with a chapati.
