Dates & Nuts Roll, a naturally sweetened sweet/dessert for all those who have a sweet tooth and don’t want to add more calories for the day. This is an awesome way to use nuts which usually stay in the pantry as we forget to eat them.
Dates are full essential vitamins, nutrients and minerals which are required for the body. One should incorporate dates in their diet as they are referred to as “potassium powerhouse.” The Dates & Nuts Roll is perfect for winters as they say we should not eat excess of it specially in the summer.
I made these as one of Diwali sweets instead of regular sweets last year. Everyone loved it. These can be stored for 2-3 months in the fridge which is a plus if you don’t want to consume it right away. Also can consumed when fasting.
Ingredients:
- 1/4 cup almonds
- 1/4 cup cashews
- 1/4 cup walnuts
- 1/4 cup pistachios
- 2 cups pitted dates
- 1 tbsp poppy seeds
- 1/2 tsp elaichi powder
- 1/2 tsp nutmeg powder (optional)
- 2 tsp ghee ( clarified butter)
Directions:
Roughly chop all the nuts using a knife, because if you use a chopper/blender it will more finer than what we are looking for. You can use any nuts of your choice.
Then using a food processor, grind the dates using pulse. In a non stick pan, add one teaspoon of ghee along with all the nuts. Roast on a slow to medium heat, stirring continuously for a couple of minutes. Take the nuts out and set aside. In a meanwhile, add the additional tsp of ghee and roast the poppy seeds. After a couple of minutes, add the chopped dates and mix well with the poppy seeds for a minute.
Now add the roasted nuts and mix everything together so that all the nuts are incorporated with the dates. Let it rest for 4-5 minutes so that it is easy to handle. Make a log and wrap it in the aluminum foil and refrigerate for a couple of hours. Cut them into 1/4 inch slices using a serrated knife.

I tried this excellent dessert recipe a few days back . It’s easy to make , delicious and so healthy with no added sugar . Enjoyed it for days , loved it .
