Veg Hakka Noodles

Everyone has a different way of making this dish.  I like to make it with a lot of garlic and ginger flavor.  Love these quick and easy fixes when you don’t know what to make.  I was going through my pantry to see what can I cook and it is so hard to decide what to cook, but actually cooking is a lot easier.  Then I saw this packet of Hakka noodles in my bin and decided to make that as we were in a rush to go to the market.  Hope you like my version of it.

Kimchi Fried Rice

Kimchi is a staple of Korean food which is very strong in flavor.  It is fermented cabbage which is spicy and pungent.  Love the flavors of this tangy, spicy cabbage.  Came across this recipe on the net and my love for kimchi made me try this recipe and wasn’t disappointed at all.  My whole family enjoyed this easy recipe which is full of flavors and the good thing is that it was ready in less than 30 minutes.

Mint & Cilantro Chutney | Hari Chutney Recipe

Mint  & Cilantro Chutney is one of the most popular chutneys in Indian cuisine.  I love pudina chutney so much that I can eat it with anything and everything but, I prefer it to be fresh. Something about having it fresh gives this chutney such a crisp flavor of mint and cilantro.

Khandvi (Microwave)

Khandvi is a savoury snack from the state of Gujarat, which can be enjoyed at any time of the day.  Today I was in a mood for something light, so decided to make Khandvi which I have tried making a several times but failed.  I want to thank Shital Ashar from Shital’s Kitchen whose recipe gave me the confidence to try this again and was impressed to see the creation.

Avocado & Grilled Corn Salsa

Corn, one of mine and my father’s favorite thing to eat specially when they are grilled with the chaat masala.  Reminds me of the days in India, when we used go to those street vendors and get grilled corn.  Here it is hard to make corn if we have the electric stove.  Yes we can grill it on the BBQ grill but it usually dries up, so I prefer to grill it on the gas stove.   Trying to eat healthy these days, as I have to shed a few pounds. Without any further delay, let me share this delicious recipe which is full of flavor and can be eaten as a Salsa or Salad.

Matara Chaat

An easy to make low calorie snack which is a very popular North Indian street food called Matara (dry white peas).  Have been eating this since I was child as I lived in India for a long time and when moved to US, my mom used to make it.  Love the flavors and is an easy snack to prepare.

Quick Kalakand (Microwave)

Kalakand is a traditional and delicious dessert which is made of whole milk.  It is like a variation of a barfi but has a grainy texture.  This sweet is usually very common during the festivals like Holi, Diwali etc.   I was given this recipe by one of my mom’s friend, but then I saw it on the internet too. So here is a quick Kalakand made in the microwave.
