Easy Green Chili Pickle

This is my second pickle I have ever made in my life.  Saw my mom making this the other day and it is so easy and delicious.  It tastes so yummy with dal, chaawal (Rice & Lentils) along with a  dry subzi.  Give it a try, it will be ready in 3-4 days…

Homemade Mango Puree

As we all know Mango season to coming to an end and what is the best way to enjoy this fruit for the whole year when you are in a mood for Mango.  So I went to NY for about 10 days and I had about 9 mangoes in the fridge which looked wrinkled from the outside when I came back.  First thought was they have gone bad.  Then I decided before I toss them away, I should peel them and see. So I start peeling and they were okay other than 2 mangoes which did go bad.  I was like I should make puree out of this and keep it for future use before they all get bad.

Bhindi Aloo

Bhindi Aloo is a very simple and easy dry dish which can be served with any kind of dal, curry or even raita.  Bhindi is one of mine and my daughter’s favorite.  This dish can be prepared in no time and is good for those busy weeknights.

Green Smoothie

Recently I bought this Nutri Bullet that everyone is raving about.   I must say it is worth buying it, as I want to shed some pounds and decided to make this drink which is the recipe provided by Nutri Bullet.  Green Smoothie a.k.a. “The Skinny Blast” is surprisingly a yummy drink which is low in calories.  Another good reason is that I get very lazy to cut fruits for myself, so it is a good way enjoy everything in one without too much hassle.  I have been drinking this for breakfast and it has kept me full for hours.

Raw Mango Dal

A very popular dish from Andhra which is made with arhar dal and raw mango.  It is a very simple dish which has a tanginess from the mango which enhances the flavor of the daal.  This is the first time I made this and really in love with it..  Came out so good along with some rice.  Beautiful combination for when you want something simple and delicious.

Lauki ka Raita

Lauki ka raita, one of my favorite raitas which I remember I had it for the first time at the Santoshi Mataa Mandir where we use to go for Navratri.  We use to eat it at the temple once at night and they use to serve it there.  This raita reminds me of my childhood days in India.  This is healthy, refreshing, and delicious accompaniment.

Fresh Homemade Salsa

When it comes to raw tomatoes, I am so picky.  I don’t like those big chunks of tomatoes, don’t know why?  I have given them a try a few times, but no luck.  When I cook too, I try to use as much tomato puree as I can wherever possible. I always used to buy salsa from the store as I kind a like the taste of it and also was hesitant to try at home as I am not a big fan of chunky raw tomatoes.  Finally I decided to give it a try after researching the net that I can make it smooth instead of chunky.  So my husband tries it and goes, “dang it is spicy” after a couple of bites he was like it is yummy…don’t feel the heat anymore…

Bharwaan Baigan Aloo

I love baigan, and bharwaan baigan is one of my favorite way to make them and relish them with paratha, roti or even rice.  Have you ever eaten a dry (sukhi) sabzi with rice, if not try it, you will love it.  My entire family loves this dish, as I add aloo to it which is also stuffed with the same masala.

Black Bean & Red Pepper Quinoa

Quinoa a high protein and fiber, a versatile grain with a mild nutty flavor, which can be used in desserts, breakfast, salads.  I have been wanting to make something with quinoa for a while, after seeing such lovely posts from foodies on the different food groups.   This is the first time ever I have made quinoa in my house, wasn’t sure how everyone is gonna like it.  My husband goes I am not sure if I want to try it as it reminds him of couscous and he doesn’t like couscous at all. So, I was like you are missing out…Then my 7 year daughter comes from school and I go, do you want to try what I made new, she goes yeah mama.. She loved it.  That made my day for sure…

Punjabi Tari Wale Aaloo

Every household has a different way of making this dish.  My daughter loves aaloo in any shape or form.  I don’t know any kid who doesn’t like aaloo.  In fact it is an all time favorite amongst adults and children.  Punjabis tend to use aloo with every vegetable they make such as gobhi aaloo, baigan aaloo, bhindi aaloo etc.

Nowadays, my little one also wants aaloo all the time.  When they don’t know what to eat, she will be like do you have aaloo mama?  This Punjabi Tari Wale Aaloo is made in a tomato based gravy which can be eaten during fasting too as I have not used any onion or garlic.

Baigan ka Bhartaa

Baigan ka bhartaa was not my cup of tea as I am not a big fan of tomatoes specially raw and this dish will be incomplete without a good amount of tomatoes.  My mom used to say before I got married, that what will you do if you will have to eat it at your in laws.  I used to be like I won’t eat it.  But nothing of that sort happened, the first time my mother in law made this dish I ate it, it was absolutely delicious.  This is my mother in law’s recipe, beautiful smoky flavor.  This also reminds me of Baba Ghanoush which is very similar.

Aam Panna (Raw Mango Drink)

Love the summer weather…Sunny and bright out all the time.  But it looks like that we have an early summer in Florida.  We are already having temperatures soaring up to 95F which we usually see in June.  There are so many drinks we make back home to beat the heat such as shikanjvi, aap panna and many other fruit drinks.  I tried my hand on making Aam Panna  which I have always used the store bought ones before.  Thanks to my mom.  Surprisingly, it came out delicious.
